I want everyone I know to know about this yummy recipe! My first exposure to avocado chocolate mousse was back in January at a restaurant called Duo on Maui for my 35th birthday dinner (we were also there for our babymoon — I’m 32 weeks pregnant today!). I picked Duo because it was right next to the resort we stayed at and had a health-conscious menu.
I’m not vegan but love trying vegan recipes. I also got the mushroom pasta alfredo off the vegan menu for my entree and it was delicious! Still working on replicating that recipe.
After we got home I Googled best vegan chocolate mousse recipe and found this gem. My recipe below is inspired by that recipe. It is perfect! My husband and I agree that this tastes better than prepackaged pudding snacks and I guarantee it is infinitely healthier!
- 3 avocados
- ~ 1 cup unsweetened almond milk
- 1/4 cup unsweetened cocoa powder
- ~5 scoops stevia
- Add avocados to blender (I use a NutriBullet) and enough of the almond milk so the blender blends the ingredients.
- Add cocoa powder and stevia. Add more of the almond milk — enough that the blender can blend everything together. Taste test and enjoy!
As you can see, this is such a simple recipe that is so yummy and good for you! You really can’t argue with any of the ingredients, which I love. I usually make a batch with 1 or 2 avocados (whatever I have on hand) and adjust the other ingredients accordingly. I haven’t had a bad batch yet!
