Do you LOVE Girl Scout Thin Mint Cookies and wish you could make a healthy smoothie that tastes just as yummy? You can!

I make a healthy peanut butter banana-based smoothie almost every afternoon when I’m home. It’s like the highlight of my afternoon.

In Tara Stiles’ book Make Your Own Rules Diet, she shares her version of a Thin Mint Girl Scout Cookie smoothie. Today, I share mine.

Ingredients

  • 2 tablespoons chia seeds
  • water
  • about 5 chunks of frozen banana
  • 1 heaping tablespoon peanut butter
  • 1 teaspoon dutch processed unsweetened cocoa powder
  • 1 serving stevia powder
  • 1/2 to 1 teaspoon vanilla extract
  • 1/2 to 1 teaspoon mint extract
  • 4 ice cubes
  • almond milk
  • fresh mint leaves (optional)

Directions

Add chia seeds to blender (I use a NutriBullet). Add just enough water to cover. Turn on the blender to break down the seeds to create somewhat of a pasty looking substance. Then add banana chunks, peanut butter, cocoa powder, stevia, vanilla, mint, & ice cubes. Top with almond milk (enough to cover all the ingredients, with just the tips of the ice still showing). Blend until smooth.

Pour into a glass and garnish with mint leaves if you happen to have some (I picked a few from my new herb garden – more on the new garden later this month!).

This smoothie takes about 5 to 10 minutes to whip up and is well worth the time investment. If you love all things chocolatey and minty, you will love it. Let me know what you think if you try it!
